Our cycling took us through the countryside and rice paddies around the town where we saw a lot of the ingredients that we would use later being grown and made.
We visited a brown rice noodle (Cao Lau)factory - a Hoi An speciality. Next we went to a mung bean grower - where the bean sprouts come from - followed by the herb growers and the markets. Although, we'd already been to the markets a couple of times ourselves - Hoi An is pretty small! The guide asked if anyone wanted to try watering the herbs the traditional way and no one else volunteered so I gave it a try! I think I was pretty good-I'm quite farm experienced after all!
After a few hours cycling we stopped for a cold drink and cold towel-both much needed! Then we went to our cooking class.
In the class we made spring rolls, white rose dumplings (another Hoi An speciality) pork with Cao Lau noodles and a Vietnamese pancake. We got to eat each course after we'd made it which was great because I was starving as always :-) and at the end of the class we had ice cream and got a cooking tool to take home.

All the dishes we made turned out pretty good, they we delicious anyway, but then it's easy not to burn your pancake when you're being supervised. Rosie started out being the teacher's pet by making a perfect spring roll, then she threw it away by making disastrous dumplings, haha!
